Boneless Single Breast Bronze Turkey Joint — Locally Sourced
A single, boneless breast from a bronze turkey, carefully trimmed and prepared by The Butchers @Topsham. Our birds are locally reared for superior flavour and texture, giving you a rich, slightly gamey taste with excellent juiciness. Perfect for family meals, special occasions, or when you want impressive roast turkey without dealing with a whole bird.
Flavour profile
Rich, full turkey flavour with a hint of natural gaminess characteristic of bronze turkeys.
Buttery, slightly sweet undertones and a firm but tender texture.
Takes well to savoury and herby seasonings, citrus and garlic, or sweeter glazes (honey, maple, or fruit-based).
Skin crisps nicely when roasted, adding a pleasant contrast to the moist breast meat.
Suggested seasoning ideas
Classic: sea salt, cracked black pepper, softened butter under the skin, fresh rosemary and thyme.
Citrus-herb: lemon zest, orange juice, garlic, thyme, and sage.
Sweet-savoury glaze: honey or maple syrup, Dijon mustard, soy sauce, and a pinch of smoked paprika.
Spiced rub: olive oil, smoked paprika, ground coriander, garlic powder, and a touch of cayenne.
Cooking instructions (oven, Celsius)
Preheat oven to 180°C (160°C fan).
Pat the turkey breast dry with paper towels. If desired, loosen the skin and spread 1–2 tablespoons of softened butter mixed with chopped herbs and minced garlic under the skin.
Season the outside with sea salt and freshly ground black pepper and any additional rub or glaze.
Place the breast on a roasting rack in a shallow roasting tin. Add a splash of stock or water to the tin to keep drippings from burning.
Roast uncovered for approximately 25–30 minutes per 500 g, or until the internal temperature reaches 68–70°C when measured in the thickest part of the breast with a meat thermometer.
Once the target temperature is reached, remove from the oven and cover loosely with foil. Rest for 15–20 minutes; carryover cooking will raise the internal temperature to about 75°C and allow juices to redistribute.
Slice and serve. For a crispier skin, finish under a high grill for 2–3 minutes before resting, watching closely to avoid burning.

Storage and handling
