Ingredients (makes about 2 pounds / 900 g)

  • 1.5 lb (680 g) ground wild venison

  • 0.5 lb (225 g) pork back fat, finely chopped or ground

  • 1½ tsp fine sea salt

  • 1 tsp freshly ground black pepper

  • 1 tsp garlic powder (or 2 garlic cloves, finely minced)

  • 1 tsp crushed juniper berries, lightly crushed

  • 1 tsp dried or 1 tbsp fresh thyme, finely chopped

  • 1/2 tsp smoked paprika (optional, for a touch of warmth)

  • 1–2 tbsp chilled water or a splash of apple cider (to bind)

  • 1 tbsp chopped fresh parsley (optional)

Method

  1. Prepare meat and fat: Keep meat and fat well chilled. If not already ground, cut venison and pork fat into small cubes and partially freeze for easier grinding. Grind through a coarse plate, then once more through a finer plate if desired for a smoother texture.
