Lamb Hearts
Description Lamb hearts are small, lean, and richly flavored offal from young sheep. Each heart is firm with a fine-grained texture and a mildly gamey, beefy flavor with a hint of sweetness. Because they’re highly muscular and low in fat, they cook quickly and benefit from short, high-heat methods or slow, gentle braising to keep them tender. They’re an excellent source of protein, iron, zinc, and B vitamins. Locally sourced lamb hearts are especially fresh and flavorful — perfect for adventurous cooks or anyone wanting a nutritious, economical cut.
Pan-Seared Lamb Hearts with Garlic, Thyme & Lemon (serves 2–3)
Ingredients
6–8 lamb hearts (about 1 to 1¼ lb total), trimmed and halved lengthwise
2 tablespoons olive oil (or a mix of olive oil and butter)
3 garlic cloves, thinly sliced
2 tablespoons fresh thyme leaves (or 1 tsp dried)
Zest and juice of 1 lemon
Salt and freshly ground black pepper
1 tablespoon butter (optional, for finishing)
2 tablespoons chopped flat-leaf parsley, for garnish
Lemon wedges, for serving
Optional accompaniments
Crusty bread or warm flatbreads
Roast potatoes or a simple green salad
Grain bowl with quinoa or farro
Instructions
Prep the hearts: Rinse hearts under cold water, pat dry with paper towels. Trim away any visible fat, valves, or connective tissue. Slice each heart in half lengthwise; if the chambers are thick, you can score the inner surface lightly to help tenderize.
Season: Sprinkle the hearts with salt and pepper on both sides. Let sit at room temperature for 10–15 minutes while you heat the pan.
Heat the pan: Warm a heavy skillet (cast iron is ideal) over medium-high heat. Add the olive oil.
Sear: When oil is shimmering, lay the hearts cut-side down in a single layer. Sear without moving for 2–3 minutes until a deep brown crust forms. Flip and sear the other side 1–2 minutes. Because hearts are lean and tender, avoid overcooking—aim for medium (a little pink inside) unless you prefer them fully done.
Add flavorings: Reduce heat to medium. Push the hearts to one side, add the garlic and thyme to the pan and let them sizzle briefly until fragrant (about 30–45 seconds). Mix everything together. Add lemon zest and squeeze the lemon juice over the hearts.
Finish: If using, add the butter and spoon the melted butter over the hearts for 30–60 seconds to glaze. Taste and adjust seasoning.
Rest and serve: Transfer hearts to a platter, let rest 2–3 minutes. Sprinkle with chopped parsley and serve with lemon wedges.
